Here's a very short summary of some of the effects whereby vitamin D may may be causatively involved in the strongly demonstrated (there are numerous accounts in the literature) inverse relationship between vitamin D levels and the severity of COVID infection. Even ignoring the literature you linked and just using common sense having a deficit puts a burden on your body and any additional burden when fighting some illness makes the fight harder. (Well, ok, there are some exceptions, humans are complex.).
